HAM FRIED RICE 
2 tbsp. vegetable oil
1 egg
1/4 lb. diced ham (1/8 inch cubes)
1/4 tsp. salt
1/2 c. bean sprouts (if sprouts not available, shred 1/4 head of lettuce)
1 tbsp. soy sauce
3 c. cold cooked rice
2 tbsp. fresh scallions (green onions), chopped

Over as hot a flame as possible, heat oil in fry pan; fry egg sunny side up. As egg begins to fry, break egg into small pieces. Add ham and bean sprouts; stir fry for 30 seconds. Add rice and stir fry for 3 minutes. Add soy sauce and green onions and stir fry until uniform in color. Add salt and soy sauce to taste.

Serves 2.
