2 c. old fashioned oatmeal 1 tbsp. all-purpose flour 1/2 tsp. salt 2 sticks real butter, melted 1 tsp. vanilla 2 c. sugar 2 eggs, beaten 1 c. finely chopped pecans Put oatmeal, flour, sugar and salt into a bowl. Pour hot melted butter over mixture. Add eggs, vanilla and pecans. Cover a cookie sheet with foil. Drop 1/2 teaspoon batter 2 inches apart on foil. Bake 10-12 minutes in a 325 degree oven. When cookies are cool, foil will peel off. Be sure cookies are brown around edges. The batter will be thin. Yield: 140 cookies. |
