LACE COOKIES 
2 c. oatmeal (use quick, not instant or old-fashioned)
1 tbsp. flour
2 c. sugar
1/2 tsp. salt
2 sticks butter (do not substitute)
2 eggs
1 tsp. vanilla

Mix the first 4 ingredients and set aside. Melt butter and pour over oatmeal mixture. Beat eggs and 1 teaspoon vanilla and add, mixing well.

Line cookie sheet with aluminum foil; drop 1/4 teaspoon batter about 2 inch apart. Bake 8 to 10 minutes at 300 to 325 degrees until nicely brown. Remove from oven and leave on foil until cool enough to peel. Store in air-tight container in a cool place. Makes about 350 cookies.
