NORWEGIAN LACE COOKIES 
1/2 c. butter
1 1/2 c. regular rolled oats
1 egg
2/3 c. sugar
1 tsp. baking powder
1 tbsp. flour

Melt the butter in a small saucepan and stir in the oatmeal. Beat egg until foamy with the sugar. Mix together the baking powder and flour and stir into the egg mixture, along with the oatmeal mixture.

Drop batter, 1 tablespoon at a time, onto greased and floured baking sheets, 2-3 inches apart. Bake in a 375 degree oven for 10 minutes or until golden brown. If cookies harden and stick to pan, return to oven for 1 minute to soften. Makes about 2 dozen.

Delicate cookie that is good for dipping in a hot drink. Years ago this recipe was given to me by a friend from Norway. She called it "havreflarn." I even purchased a heavy iron cookie sheet just for the baking -- the pan retained heat and facilitated easy removal of the cookies. I am celebrating Christmas away from home and forgot to bring my recipes with me. It took some searching on line to find this recipe and I am so glad you posted it. Thank you!
