NORWEGIAN LACE COOKIES 
1 stick butter
1 1/4 c. oatmeal
3 tbsp. potato flour or cornstarch
1/2 c. sugar

Stir butter and sugar until light and fluffy. Add oatmeal and potato flour. Drop teaspoon in small balls far apart onto greased cookie sheet. Flatten slightly with back of spoon. Bake in 325 degree oven for 10 to 15 minutes. Leave on cookie sheet a few minutes to stiffen a little before removing. Yield: 1 1/2 dozen.
