OATMEAL LACE COOKIES 
2 1/4 c. oatmeal
2 1/4 c. light brown sugar
3 tbsp. flour
1 tsp. salt
1 c. melted butter
1 egg
1 tsp. vanilla
Semi-sweet chocolate

Preheat oven to 375 degrees. Melt butter in saucepan over low heat. In large mixing bowl, mix dry ingredients: oatmeal, sugar, flour and salt. Stir in melted butter, then add slightly beaten egg and vanilla extract. Blend well.

On ungreased cookie sheet, arrange batter by teaspoonfuls at least 2 inches apart. Bake until lightly browned, approximately 7 minutes.

Meanwhile, melt sweet chocolate in double boiler. When cookies are cooling and firm enough, spread half of them with chocolate and sandwich with another cookie; then sprinkle with remaining chocolate when finished.
