HOLIDAY SCALLOPED POTATOES 
2 tbsp. butter
3 tbsp. flour
2 c. milk
3 c. diced cooked potatoes
2 tbsp. chopped parsley
2 tbsp. chopped pimento
1 1/2 tsp. salt
1/2 c. shredded Cheddar cheese
1/2 c. buttered bread crumbs
1/4 tsp. paprika

Melt butter in saucepan over low heat; gradually add flour. Cook until bubbly, stirring constantly. Gradually add milk; cook, stirring constantly, until thickened. Stir in potatoes, parsley, pimento and salt.

Spoon into greased 1 1/2 quart casserole. Combine cheese, bread crumbs and paprika; sprinkle over potato mixture. Bake at 400 degrees for 20 minutes. Yield 4-6 servings.
