HOLIDAY MASHED POTATOES 
3 lb. potatoes (12 med.) peeled, cooked & hot
1 (8 oz.) pkg. cream cheese, room temperature
1/4 c. butter, softened
1/2 c. sour cream
1/2 c. milk
2 eggs, lightly beaten
1/4 c. finely chopped onion
1 tsp. salt
Dash pepper

Mash potatoes. Add cream cheese in small bits. Add butter. Beat well until cheese and butter are melted and completely mixed. Beat in sour cream. To the milk add eggs and onions, salt and pepper. Then add to potatoes.

Beat well until light and fluffy. Place in 9 inch greased casserole and refrigerate several hours or overnight if not using immediately. Bake in preheated 350 degree oven for 45 minutes until lightly brown on top. Let sit for about 10 minutes before serving.
