MAKE AHEAD BUFFET HOLIDAY
POTATOES
 
5 lbs. potatoes with 1/2 lb. melted butter to moisten
OR
10 lbs. potatoes with 1/2 lb. melted butter to moisten
1 sm. onion (for 5 lbs. potatoes) or less than med. onion, grated for 10 lbs. potatoes
Paprika to dust top

No salt. Pepper may be used, if desired for top, lightly with paprika.

Boil potatoes in jacket for 20 minutes or until slightly firm, not mushy. Cool until easy to handle, peel and grate on large section of grater.

Grate medium or less onion onto potatoes to catch onion juice.

Pour melted butter over all and mix gently to fluff instead of pack potatoes.

Note: Is easier to use hands (be certain they are clean) to mix.

Dust top with paprika; sprinkle with pepper, if desired on top of paprika.

May be stored in refrigerator overnight, covered with Saran Wrap. Bake uncovered at 400 degrees until heated through and lightly browned.

A 13x9 inch cake pan or 12x16x1 1/2 inch pan for 5 lbs. potatoes or combination of both for 10 lbs. of potatoes.

Especially good with ham as main meat dish or spareribs. Use spatula to serve.
