CITRUS OATMEAL BRAN MUFFINS 
1 c. 3 minute quick oats
2 c. flour
1/3 c. sugar
1 tbsp. brown sugar
1 tsp. baking powder
3/4 tsp. salt
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 c. bran cereal
1 1/4 c. orange juice
2 eggs
1/3 c. oil
1 tbsp. orange peel

Soften bran cereal in 1/4 cup orange juice. In large bowl, stir together dry ingredients, set aside. Combine remaining one cup orange juice, eggs, vegetable oil and orange peel, mix until well blended.

Add liquid mixture all at once to dry ingredients, stirring just until moistened. Fold in softened bran cereal. Fill greased or paper lined muffin pans 2/3 full. Bake at 400 degrees for 20 to 25 minutes or until golden brown. Makes 1 dozen.
