VEGETABLE SANDWICHES 
1 (8 oz.) pkg. cream cheese
1 cucumber
1 carrot
1 bell pepper
1/4 tsp. minced onion
1 tsp. lemon juice
1 tbsp. mayonnaise

Grate cucumber, carrot, bell pepper and onion very finely. Pour lemon juice over grated vegetables. Mix vegetables, softened cream cheese and mayonnaise.

Spread on favorite bread and cut into desired shapes and sizes.
