ZUCCHINI (OR CARROT OR PUMPKIN)
BREAD
 
3 eggs
1 c. oil
1 2/3 c. sugar
3 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
3 tsp. cinnamon
1/3 c. brown sugar
1 1/2 tsp. vanilla
2 c. grated zucchini, drained (or 2 c. grated carrots or pumpkin)
Optional 1 c. chopped nuts or 1 c. raisins

Preheat oven to 350 degrees. Beat eggs. Add sugar and oil. Sift dry ingredients together and add to above. Add vanilla. Add zucchini. Add nuts last. Divide batter into 2 greased loaf pans. Bake at 350 degrees for 50-60 minutes. Can freeze.
