CANDIED YAMS - YANKEE STYLE 
4 to 5 lg. sweet potatoes
1 stick butter
1 1/2 c. brown sugar
2 tbsp. water

Peel potatoes, slice in half lengthwise and boil for 15 minutes, fork tender but not well done. Drain.

In a large skillet melt butter on medium heat. Add brown sugar and stir until butter and sugar are well combined. Stir in water, bring to a boil on medium heat and cook approximately 5 minutes. With mixture at a continuous boil add potatoes, turning occasionally to coat both sides. Continue cooking until syrup thickens and potatoes are coated well. (If mixture is slow to thicken, increase heat but watch carefully to prevent burning.) Serves 8.

Comments: Even the Southern members of our family love this recipe. My mother is called upon every holiday to prepare her special sweet potatoes.
