CANDIED YAMS 
3 or 4 lb. sweet potatoes
1 block butter
1 c. white sugar
1 c. brown sugar
1 can pineapple slices
1 sm. jar of cherries
3 tsp. cinnamon

Peel and cut potatoes in quarters. Cut in large julienne strips. Place in large pan or glass casserole dish. Mix white and brown sugars together with cinnamon added in a small bowl. Spread sugar and cinnamon mixture over potatoes. Add pats of butter arranging them around the pan.

Cut pineapple slices in half and place over potatoes. Add cherries arranging them around pan. Bake in a 400 degree oven until done and sugar mixture is thick.

This goes well with pork or beef roast or baked turkey.

Do I boil the sweet potatoes first, use them raw and peeled, or use canned sweet potatoes for this recipe?

Hi Patty,

Peel the yams and slice as directed, then bake. You'll need 3 or 4 lbs yams (not canned) and the recipe doesn't require boiling.
