TEACHER'S BREAKFAST EGGS 
1 lb. crumbled Italian sausage
1/4 lb. mushrooms, chopped
1 med. onion, diced
Salt and pepper
6 eggs
3 tbsp. sour cream
6 tbsp. Italian red sauce
8 oz. Cheddar cheese (grated)
8 oz. Mozzarella cheese (grated)

1. Preheat oven to 400 degrees. Grease 9x13 inch baking dish.

2. Combine sausage, mushrooms and onion in large skillet and saute over high heat until sausage is cooked.

3. Season with salt and pepper and drain well.

4. Combine eggs, sour cream in blender and whip 1 minute.

5. Turn into baking dish and bake until eggs are softly set, 4-7 minutes.

6. Spoon sauce over top; add sausage mixture, then cheese.

7. To serve immediately, broil until cheese melts.

8. To serve next day, refrigerate and then bake at 325 degrees until cheeses are melted, about 30 minutes.
