SPANISH RICE 
1 lb. ground beef
1 med. onion, sliced
1 green pepper, chopped (opt.)
1 1/2 c. Minute Rice
1 can tomatoes
Salt & Pepper to taste
Colby cheese, grated

Brown ground beef with onion and green pepper (optional). Rinse this meat mixture with hot water in colander over large pan to catch meat drippings (discard). Place back in cooking pan and continue to brown with rice. Add tomatoes. Let cool until all moisture is absorbed about 10 minutes. Add salt and pepper. Turn burner down to low heat and cook long enough to melt the cheese on top.

NOTE: You may substitute tomato juice, as follows: in place of the tomatoes: 2 cups tomato juice and 1 cup tomato sauce. Watch for too much liquid.
