CHRISTMAS CHERRIES (Cookies) 
1/2 c. shortening
1/4 c. sugar
2 tbsp. orange juice
1 tbsp. lemon juice
1 1/2 tsp. grated lemon rind
1 tbsp. vanilla
1 c. sifted cake flour
1 egg
3/4 c. fine chopped nuts
8 to 10 candied cherries, cut into fourths

Beat sugar and shortening until light. Add egg, juices, vanilla and lemon rind. Mix well and add flour and mix well. Wrap in wax paper and chill well.

Roll into 1/2 inch balls. Roll in slightly beaten egg whites and roll in chopped nuts. Place on ungreased cookie sheet 1 inch apart. Press a piece candied cherry on top. Bake 350 degrees for 20 minutes.
