POTATO PANCAKES 
10 potatoes
2 onions
4 eggs
1/2 c. flour
Salt & pepper to taste
Oil for cooking
Sour cream & apple sauce for serving

Cut potatoes and onions into chunks. Put small batches in food processor with blade run about 2 minutes until almost pureed. Pour into large bowl. Beat eggs and add to potatoes. Add flour, salt and pepper; mix well. Heat 1/2 inch oil in large skillet. When hot, drop large spoonfuls into oil. Turn once and cook until well browned both sides. Serve hot with sour cream and applesauce.
