RACHEL'S FAVORITE BRISKET 
4 lbs. brisket of beef (1st cut)
6 cloves of fresh garlic
Salt and pepper to taste
Paprika to taste
2 tbsp. vegetable oil
2 lg. onions chopped
6 carrots chopped round
4 to 5 celery with leaves
1 c. tomato sauce or tomato juice
1 env. dried onion soup mix

Preheat oven to 325 degrees. Rub meat with crushed garlic and sprinkle with salt, pepper and paprika. Heat oil in heavy casserole and brown meat on all sides and add onion, carrots and celery. Cover with tomato sauce and sprinkle with soup mix. Bake in covered casserole for 3 hours. Remove cover for 1/2 hour before serving. Slice across grain of meat and serve.
