BARBECUED BRISKET | |
3 oz. bottle liquid smoke 2-3 lb. brisket or London broil SAUCE: 1 c. ketchup 1/4 c. Worcestershire sauce 1/4 c. lemon juice 1 tsp. salt 1 tsp. chili powder 1 tsp. celery seed 1/2 c. water Place brisket in broiler pan. Cover with 3 oz. liquid smoke. Sprinkle with pinches of celery, onion and salt. Cover and refrigerate overnight. Next day, drain off smoke. Sprinkle with salt and pepper and some Worcestershire sauce. Cover with foil. Bake at 275 degrees for 5-6 hours. Mix ingredients for sauce and bring to a boil. Uncover and pour 1 cup of sauce over meat for last hour. Serve remaining sauce with meat. |
