CORNMEAL WITH CHEESE (PULISZKA) 
1 tbsp. salt
3 c. boiling water
1 c. yellow cornmeal
1 tbsp. butter
16 oz. cottage cheese

Add the salt to the rapidly boiling water and slowly stir in the cornmeal, stirring constantly to avoid lumps. Cook about 5 minutes. Remove from fire, add the butter and stir until it melts. Place a layer of cornmeal in the bottom of a well butter baking dish and cover with a layer of cottage cheese; continue the layering until the dish is filled, having the top layer being cheese. Bake in a moderate oven about 30 minutes. Serve with thick sweet cream.
