SPINACH AND CUCUMBER SALAD 
1/4 c. plain low-fat yogurt
1 tbsp. olive oil
1 tbsp. fresh lemon juice
Salt to taste
4 c. fresh spinach leaves, torn
1/2 c. cucumber, sliced and pared
1 tbsp. fresh dill, snipped
Ground pepper to taste

Mix yogurt, oil, lemon juice and salt and pepper in salad bowl. Just before serving, add remaining ingredients and toss to coat with dressing. Serves 4.
