MINTED CUCUMBER-RADISH SALAD 
2 lg. cucumbers, halved lengthwise, seeded & sliced 1/4" thick
1 tsp. salt
1/2 c. thinly sliced radishes
1 c. plain yogurt
1 tbsp. minced fresh mint or 1 tsp. dried or to taste
Pepper to taste
Mint sprigs for garnish (opt.)

In colander mix cucumbers and salt; let drain 1 hour. Pat dry with paper towels; combine in serving bowl with radishes. Stir yogurt until smooth; stir in mint. Pour over cucumber mixture; toss to coat; chill several hours. Season with pepper and toss. Serve chilled or at room temperature. Garnish with mint. Serves 4.
