MINTED CUCUMBER SALAD 
1/2 c. plain non fat yogurt
3 tbsp. rice or white wine vinegar
1 tbsp. sliced fresh mint or 1 tsp. dried mint
1/2 tsp. sugar
1/4 tsp. cracked black pepper
2 med. cucumbers, cut in wedges

In medium bowl, whisk yogurt, vinegar, mint, sugar and cracked black pepper until well blended. Add cucumber wedges and toss to coat.
