CALIFORNIA COLE SLAW 
4 c. finely shredded cabbage
1/2 c. thinly sliced celery
1/2 c. chopped cucumber
2 tbsp. chopped green pepper
2 tbsp. sliced green onion
1 tbsp. chopped parsley
1 tbsp. lemon juice
1/4 c. mayonnaise
1/4 c. sour cream
1/2 tsp. salt
1/2 tsp. sugar
Dash of pepper & paprika
1 ripe avocado

Combine cabbage, celery, cucumber, green pepper, onions and parsley. Cover and chill.

DRESSING: Combine lemon juice, mayonnaise, sour cream, salt, sugar, pepper and paprika. Mix until smooth.

Just before serving, peel avocado and dice. Add avocado and dressing to cabbage mixture and mix lightly. Serves: 6.
