1 c. Mock Sour Cream 1/2 c. yogurt (1% or less fat, by weight) 1 tbsp. onion powder 1 c. grated carrots 1 (8 oz.) can crushed pineapple in own juice, drained (reserve 1/4 c. juice) 1/3 c. raisins Combine the dressing ingredients and set aside. Combine the cabbage and carrots in a large bowl. Stir in the drained pineapple and the 1/4 cup reserved juice. Stir in the raisins and the dressing. Serve chilled. Makes 6 cups. 63 calories per 1/2 cup serving. |
