MICROWAVE CREAMY WILTED LETTUCE
SALAD
 
6-8 slices bacon
1/2 c. sour cream
1 egg, slightly beaten
1/4 c. vinegar
2 1/2 tbsp. sugar
Salt to taste
1 head Boston lettuce
1/4 lb. fresh spinach
3 tbsp. finely sliced fresh green onions

Substitutes: Sweet Bermuda onion, head lettuce, watercress or any soft salad greens. Crisp iceberg lettuce is not recommended.

Cook bacon in microwave until crisp. Remove bacon, drain and crumble; set aside. Remove all but 3 tablespoons bacon grease in bowl. Stir in sour cream, egg, vinegar, sugar and salt. Cook, uncovered for 3 minutes, stirring after each minute. Add lettuce and spinach which has been washed, thoroughly dried and torn into large bite size pieces. Toss in onion and bacon. Mix well and serve at once.

Since microwave ovens vary in power, you may need to adjust your cooking time.
