MIXED VEGETABLE CASSEROLE 
2 boxes mixed vegetables, cooked & drained
1 c. onions, chopped
1 c. celery, chopped
1/2 c. Cheddar cheese, shredded
1/4 c. green pepper, chopped
1 c. mayonnaise

Combine ingredients and place in casserole dish.

TOPPING:

2 c. crushed Town House crackers
1 stick butter, melted
1/4 c. shredded Cheddar cheese

Sprinkle casserole with cheese. Cover with crackers, then pour butter over crackers. Bake uncovered at 325 degrees for 30 minutes.
