DATE FILLED COOKIE 
2 c. dates, chopped
1/2 c. sugar
1/4 tsp. salt
1/2 c. water

Bring to boil, reduce heat. Cover and simmer 5 minutes, stir often. Add 2 tablespoons lemon juice.

COOKIE DOUGH:

1 c. shortening
1/2 c. white sugar
1/2 c. brown sugar
1 egg
3 tbsp. milk
1 tsp. vanilla

Beat until creamy then add: 1/2 tsp. salt 1/2 tsp. baking soda

Chill 1 hour. On floured cloth roll 1/2 the mix to 1/8 inch thick, cut in 2 1/2 inches in diameter cookies. Place 1 teaspoon filling on each and top with a second cookie. Press with inverted teaspoon to seal. Bake 375 degrees for 10- 12 minutes.
