CHEESE CHILI CUBES 
8 eggs
1/2 c. flour
1 tsp. baking powder
3/4 tsp. salt
3 c. shredded Monterey Jack Cheese (12 oz.)
1 1/2 c. cottage cheese (12 oz.)
2 (4 oz.) cans mild green chiles, drained, seeded and chopped

In mixer beat eggs until light 4 to 5 minutes. Stir together flour, baking powder and salt. Add to eggs and mix well. Fold in Monterey Jack cheese, cottage cheese and chiles.

Turn into greased 9 x 9 x 2 inch baking dish. Bake at 350 degrees for 40 minutes. Remove from oven; stand 10 minutes. Cut small squares. Serve hot. (Also, good cold.)
