SPINACH & ZUCCHINI 
1/2 pkg. fresh New Zealand spinach or 1/2 pkg. frozen spinach, cooked
1 lg. onion
1 bell pepper
2 lbs. zucchini
1 beaten egg
1 pkg. buttered bread crumbs (from Pepperidge Farm stuffing mix)

Cook spinach. Slice one large onion and brown until limp in butter. Slice one bell pepper in rings. Slice and blanch zucchini. Make a layer of zucchini in buttered casserole, then layer spinach, onion, and bell pepper rings. Pour egg over all and top with bread crumbs. Bake in 350 degree oven for about 25 minutes.
