SPINACH AND ZUCCHINI CASSEROLE | |
1 pkg. frozen spinach, can use fresh 1 sm. onion, chopped (about 1/2 cup) 1 egg 3 soda crackers, crushed Parmesan cheese 1 lb. zucchini, sliced (about 4 c.) 1 clove garlic or 1/4 tsp. powdered 1 med. can mushrooms 1/2 c. cheddar cheese, cubed Cook spinach according to directions. Drain well. Cook zucchini for 5 minutes or until clear. Drain well. Saute onion in butter with garlic. Combine ingredients. Pour into buttered casserole. Sprinkle with Parmesan cheese. Bake at 350 degrees for 35 minutes or so, uncovered. May be prepared ahead of time and stored in refrigerator. Will take longer to bake. Serves 6. |
