SUMMER ZUCCHINI CASSEROLE 
1 med. zucchini
1 med. summer squash
2 rolls Ritz crackers
2 tbsp. minced garlic
1 tsp. Tabasco
1 tsp. Worcestershire
1 tbs. black ground pepper
1/2 c. Cheddar cheese
1/2 c. Monterey Jack plain or pepper cheese
1/4 stick butter

Cut summer squash and zucchini into 1/4 round slices. Place alternately in casserole dish, set oven at 400 degrees. Roll out Ritz crackers. (Place in plastic bag and crush with rolling pin.) Melt 2 tablespoons of butter in microwave and mix with crackers. Add remaining ingredients to cracker crumbs, then sprinkle over vegetables; dot top with remaining butter. Cover and cook 1 hour. Sprinkle Hungarian paprika over top.

Since microwave ovens vary in power, you may need to adjust your cooking time.
