ZUCCHINI CASSEROLE 
4 c. sliced zucchini
2 c. water
2 eggs
1 c. mayonnaise
1 medium onion
1/4 c. chopped green pepper
1 c. Parmesan cheese
salt and pepper to taste
crushed Ritz crackers

Cook zucchini until tender and drain. Beat eggs and stir in mayonnaise and add rest of ingredients. Pour in a greased 1 1/2-quart casserole. Dot with butter. Top with cracker crumbs.

Bake in 350°F oven for 30 minutes.
