SUMMER SQUASH CASSEROLE | |
1 med. onion 2 tbsp. butter 2/3 c. sour cream 3 or 4 young yellow (not zucchini) summer squash 1/2 c. cracker crumbs (Ritz) or bread crumbs Plus butter for crumbs 1. Saute chopped onion in butter until soft; set aside. 2. Cook yellow squash until tender; drain. 3. Mix together onions, squash and sour cream. Place in casserole and top with buttered crumbs. 4. Bake at 350 degrees for 20 minutes. Serves 4. |
