YOUNG FRESH - COCONUT NOODLES | |
2 tbsp. cooking oil 2 cloves garlic, minced 1 sm. onion, sliced 1 med. tomato, sliced 1/2 lb. raw shrimp 1/2 c. shredded cooked chicken 2 c. shredded very young coconut 1 c. sliced celery 2 c. bean sprouts 1 tbsp. soy sauce 1 tsp. salt 1/2 tsp. black pepper Shell and devein shrimp and slice lengthwise. Heat oil; saute garlic until brown. Stir in onion and tomato. Next add shrimp and chicken. Cook for 3 minutes. Add shredded coconut and celery, cook for 2 minutes. Then add bean sprouts, broth, and soy sauce. Season with salt and pepper. Simmer for 5 minutes. Serve hot. |
