BANANA GINGER MUFFINS | |
1/2 c. butter 1/4 c. brown sugar 1/4 c. sugar 1/3 c. dark molasses 1 egg 1/4 c. water 1/2 c. banana, mashed (1 banana) 2 c. all-purpose flour 1 tsp. baking soda 1 tsp. baking powder 1/2 tsp. salt 1 tsp. ginger 1 tsp. cinnamon Beat butter, sugars and molasses until well creamed. Add egg and beat until fluffy, 3 to 4 minutes. Mix in remaining ingredients, mixing only until blended. Fill greased or lined muffin cups almost full. Bake at 400 degrees for 15 to 20 minutes. |
