GINGER MOLASSES MUFFINS | |
1 1/2 cups all-purpose flour 1/2 cup ground flaxseed, wheat bran or oat bran 1/2 tsp. salt 1 1/2 tsp. baking powder 1 tsp. cinnamon 3/4 cup granulated sugar 1/2 cup molasses (Grandma's) 2 eggs, lightly beaten 1/4 cup vegetable oil 3/4 cup milk 2 tbsp. fresh ginger, grated Preheat oven to 350°F. In a mixing bowl combine dry ingredients together and set aside. Mix together milk, lightly beaten eggs, molasses and oil with a wire whisk stirring until mixture is free of lumps. Add dry ingredients slowly to the wet mixture and stir until just combined and then add freshly grated ginger to the batter. Pour mixture into prepared muffin cups filling 2/3 full. Bake at 350°F for 25 minutes or until nicely browned on top. Submitted by: Alan Brown |
