ZUCCHINI BREAD 
3 eggs, beaten
1 c. oil
2 c. sugar
2 c. zucchini (grated not peeled)
3 c. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. baking powder
1 c. nuts, chopped

Combine eggs, oil, sugar and squash. Sift dry ingredients. Then make well in center, add squash mixture and blend. Add nuts. Pour into well greased pans. Makes 2 large or 4 small loaves. Bake at 350 degrees for 45-60 minutes.
