YAM BALLS 
3 c. cooked yams
1/4 c. butter
3/4 c. brown sugar
2 tbsp. milk
1/4 tsp. salt
1/2 tsp. grated orange peel
10 lg. marshmallows

Mash yams; add butter, sugar, milk, salt, and rind. Shape about 1/3 cup of mixture around marshmallow. Bake in 375 degrees oven until marshmallow begins to ooze, about 10 minutes. Can be frozen. If frozen, bake about 20 minutes. If desired, can add chopped nuts to the yams.
