3/4 c. oil
1 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
2 1/2 c. flour
3 c. chopped apples (1/4 inch)
1 1/2 c. sugar
1 tsp. baking soda
2 tsp. baking powder
2 eggs
1 c. chopped nuts
1/2 c. golden raisins (optional)

Mix wet ingredients. Add mixed dry ingredients and stir. Add apples. Mixture will be very dry - do not add liquid, the apples will add moisture. Bake in tube pan or 9x13 pan at 325 degrees for 55 minutes.
