FRESH CHOPPED APPLE CAKE 
3 c. chopped apples
1 c. cooked raisins
1 c. nuts, chopped
2 c. white sugar
1 tsp. baking soda
1/2 tsp. salt
3 c. plain flour
1 tsp. cinnamon
2 eggs
1 tsp. vanilla
1 1/4 c. vegetable oil

Stir apples, raisins and nuts together. Sift together dry ingredients. Mix eggs, vanilla and oil. Combine alternately the dry ingredients and eggs with the apple mixture.

Bake 45 minutes at 350 degrees in a 9 x 13 x 2 inch glass baking dish. May be served plain or with cream cheese frosting. (Made with 8 ounces of cream cheese, 1/4 cup honey and 1 teaspoon vanilla.) Add only enough water to raisins when cooking so there will not be excess liquid.
