ORANGE GLAZED SWEET POTATOES 
4 med. sweet potatoes
1/4 tsp. salt
1/2 c. brown sugar, firmly packed
1 tsp. cornstarch
1 c. orange juice
1/4 c. raisins
1/4 c. butter
3 tbsp. walnuts, chopped
3 tbsp. dry sherry

Cook or steam sweet potatoes until tender. Let cool; peel and quarter. Arrange sweet potatoes in a lightly greased 13 x 9 x 2 inch baking dish. Sprinkle with salt.

Combine brown sugar and cornstarch in a small saucepan; stir in orange juice and raisins. Bring to boil; reduce heat. Cook, stirring constantly, until thickened. Add butter, walnuts and sherry; stir until butter is melted.

Pour glaze over sweet potatoes. Bake, uncovered, at 350 degrees for 20 minutes.
