ORANGE GLAZE SWEET POTATOES 
2 lb. or 6 medium sweet potato
2/3 c. brown sugar
2/3 c. white sugar
1 tsp. cornstarch
1 tsp. salt
1/2 tsp. grated orange peel
1 c. orange juice
2 tsp. butter

Peel and bake potatoes in a 350°F oven for an hour or so until just fork tender. Mix all other ingredients in a small saucepan and bring to a boil over medium heat. Boil until it begins to thicken about 1-2 minutes. Cut cooled cooked potatoes up into large chunks. Place pieces in an 8 x 8 baking dish and pour orange juice mixture over the top. Return to the oven for about an hour for flavor to permeate potato.
