HOT GERMAN POTATO SALAD 
6 med. potatoes
1 stalk celery, chopped
Onion salt
Pepper
4 slices bacon
3 tbsp. flour
1/2 c. apple cider vinegar
1/2 c. water
1/2 c. sugar

Boil potatoes with skins on until fork-tender, but not mushy. Cool enough to handle and remove skins. Cut into cubes and layer in a 2-quart casserole dish. Add chopped celery. Add onion salt and pepper as desired. Dice and fry bacon until crisp in medium fry pan. Do NOT drain. Add flour while hot (this will foam). Stir using a wooden spoon (not a rubber spatula as this is VERY HOT). Mix together apple cider vinegar, water and sugar. Quickly add to bacon and flour mixture. Heat on medium high until thickened. Pour over warm potatoes and serve. Serves 4 to 6.
