BROCCOLI SOUFFLE 
1 (10 oz.) pkg. frozen chopped broccoli or spinach
1/4 c. chicken broth
1 c. well drained cottage cheese (small curd)
1/4 c. grated Parmesan cheese
1 tsp. minced onion
1 beaten egg
1 tsp. salt

Cook broccoli in chicken broth. Drain well. Combine cheeses, egg, onion, and salt. Gently mix in broccoli. Bake in greased 1 1/2 or 2 quart casserole in preheated 350 degree oven for about 30 minutes, or until knife inserted in center comes out clean. Top should be golden brown. Will keep puffed in warm 300 degree oven until ready to serve. Serves 4.
