MARINATED MUSHROOMS 
1 lb. fresh mushrooms
1/2 tsp. salt
1/4 tsp. black pepper
1 tsp. oregano
1/3 c. red wine vinegar
1 c. olive or vegetable oil

Trim the ends from the stems. Wash and dry mushrooms. Cut mushrooms. Mix remaining ingredients together. Add to the mushrooms and toss. Let stand at room temperature 4 hours. Makes about 4 cups.

VARIATION:

Add 1/2 cup each of bell pepper and onion sliced in bite-size pieces. Add to the mushrooms and marinate the same amount of time.
