MARINATED ARTICHOKE HEARTS AND MUSHROOMS | |
2 (9 oz.) pkg. frozen artichoke hearts 3/4 c. salad oil 1/2 c. lemon juice 1 tbsp.sugar 2 tsp. salt 1 tsp. dry mustard 1/2 tsp. pepper 1/2 tsp. dried basil 1 sm. garlic clove, crushed 1 lb. mushrooms, sliced 2 tbsp. diced pimento Prepare frozen artichoke hearts as labels direct; drain well. In large bowl, mix salad oil with next 7 ingredients until well blended; stir in artichoke hearts, mushrooms and pimento. Cover and refrigerate, tossing occasionally. Makes 8 first course servings. About 115 calories per serving. prepare a day ahead if possible. |
