MARINATED ARTICHOKE HEARTS WITH
MUSHROOMS
 
2 (9 oz.) pkgs. frozen artichoke hearts
3/4 c. salad oil
1/2 c. lemon juice
1 tbsp. sugar
2 tsp. salt
1 tsp. dry mustard
1/2 tsp. pepper
1/2 tsp. dried basil
1 sm. clove garlic, crushed
1 lb. mushrooms, sliced
2 tbsp. diced pimento

Day ahead: Prepare frozen artichokes as label directs; drain well. In large bowl, mix salad oil with next 7 ingredients, until blended; stir in artichoke hearts, mushrooms and pimento. Cover; refrigerate, tossing occasionally. Makes 8 servings. About 115 calories per serving.
