SPANISH TURKEY | |
2 turkey drumsticks (about 3 lbs.) 1 c. chopped celery 1/2 c. chopped onion 1 (16 oz.) can tomatoes, drained (reserve liquid) 1 sm. green pepper, slivered 1 c. liquid (reserve tomato juice and water) 1 bay leaf 1 tsp. salt 6 stuffed green olives, sliced 2 c. uncooked noodles Wash drumsticks and pat them dry. Place drumsticks in baking pan and bake uncovered at 450 degrees for 20 minutes. Then lower oven to 350 degrees. Add the celery, onion, tomatoes, green pepper, liquid, bay leaf and salt. Cover the pan and bake for 2 hours. Add the olives and uncooked noodles, cover, and bake for an additional 30 minutes. Cut meat from turkey legs, discard bones, and serve at once. Makes 4 servings. |
